Better Broth Recipe: Tofu Scramble

I keep finding ways to use the Better Broth powder that aren’t broth. It’s just a great all-around, no-salt seasoning blend! Here’s a recent one for a savory tofu scramble:

  • 1 12-oz block firm tofu, crumbled
  • ~1 tsp Better Broth powder
  • 1/4-1/2 tsp salt

Mix these together with a fork. Sautee your add-ins, like onions, peppers, greens, mushrooms, etc. When they are almost ready, top with the tofu mix and let it heat through. (Putting it on top helps it not stick to the pan.)

I use about 1/4 of this for one serving. The leftovers will keep in the fridge for a few days until I can use it up.
